Quick Vibrant Grilled Summer Vegetable Medley

These grilled quick and simple, yet delicious and colorful grilled vegetables are the perfect side dish for your next summer cookout or even a weeknight dinner at home. This recipe combines the natural flavors of your favorite summer season produce with that smoky carmalized goodness we all crave from the grill. Follow these simple steps below to create and healthy yet savory dish that everyone will love!

 

Ingredients:

     

      • 2 zucchinis, sliced

      • 1 eggplant, sliced

      • 1 red bell pepper, cut into strips

      • 1 yellow bell pepper, cut into strips

      • 2 ears of corn, cut into halves

      • 1 red onion, cut into wedges

      • 2 tablespoons olive oil

      • 1 teaspoon garlic powder

      • 1 teaspoon dried oregano

      • Salt and pepper to taste

      • Fresh basil for garnish

    Instructions:

       

        1. Preheat the Grill: Heat your grill to medium-high.

        1. Prepare the Vegetables: Place all the vegetables in a large bowl. Drizzle with olive oil and season with garlic powder, oregano, salt, and pepper. Toss to coat evenly.

        1. Grill the Vegetables: Place the vegetables directly on the grill. Grill for about 5-7 minutes on each side, or until they are tender and have nice grill marks.

        1. Serve with your favorite protein of choice!
